Masala chicken fry

Ingredients: 

Chicken -1/2kg
Coconut oil - 2to 3tbsp
Coriander powder - 11/2tbsp
Turmeric powder -1/2tsp
Garam masala - 1/2tsp
Chilli powder -1tsp
Pepper powder -1tsp
Ginger-garlic paste - 1tbsp
Curry leaves- a handful
Salt

Method:

Mix the chicken with all the ingredients above, except coconut oil.Heat a pan and cook the chicken with little water .Cook it till all the water has evaporated and add oil to this. Reduce the flame to medium -low and fry the chicken till it is brown.Serve hot.

    How are you? I like this recipe. I am very fond of dishes cooked in coconut oil and developed the taste during my long stay in Kuwait, where 99% Indian food joints serve Keralite food.
    I have a good mind to try coconut oil soon.
